The Hairy Bikers Go West - Dumfries is on BBC Two tonight at 7pm.

The Hairy Bikers are back in Scotland but this time in the stunningly beautiful region of Dumfries and Galloway. It’s another place close to Dave and Si’s hearts, a rural paradise, with a glorious coastline that stretches for more than 200 miles, which they used to visit thirty years ago.

Dave and Si can’t wait to get cooking, but first, they head inland to New Galloway, a picturesque village nestled in amongst a beautiful loch and national park. They’re looking to find a perfect accompaniment for the lobster they’ve discovered near Port William and they think a restaurant run by Margaret, Andrew and Sophie might have the perfect answer - Scottish pasta.

Traditionally, pasta-makers use durum wheat, grown mainly in North America and Italy. Its high protein and gluten helps give the pasta its funky shapes and textures. But Margaret, Andrew and Sophie use local oat and wheat flour and, after Si’s gets hands on with the pasta making process, the Bikers discover their produce can rival any from abroad. Armed with lobster and that Scottish pasta, the Bikers head to the kitchen to create butter Poached lobster served with some of that lovely Scottish Bucatini pasta.

Dave and Si then head towards the market town of Castle Douglas, to Potterland Farm, to meet James and Karen. James took over the running of this beef and sheep farm from his dad almost 15 years ago and together the family is using their 160 acres to create tasty smoked lamb. For extra inspiration, Dave and Si have heard about a place that not only makes good pies, they officially make the best hand-made Scotch pies in the whole wide world.

Armed with lamb from James and Karen’s farm, and with a pastry masterclass still ringing in their ears, the boys head back into the kitchen to create a Lamb and Caper Pie.

After collecting some wonderful cheese and fruit from the Loch Arthur Camphill Community, a farm shop and café set up to offer opportunities for people with learning disabilities, it’s back to the kitchen, where Dave and Si create Caramelised Apple Cheesecake.

For their final visit in the West of Scotland, Dave and Si learn about Scotland’s greatest poet ‘Rabbie Burns and his strange diet requirements while enjoying a more up to date meal cooked by the Globe’s talented chefs.
